Dietician approved simple & quick immune boosting Chicken Veggie soup
Chicken soup has long been known as one of the best home remedies to boost your immunity and fight off nasty bugs!
According to studies, it has been shown to not only clear nasal congestion but also thin mucus, making it the perfect cold and flu fighting dish! Turmeric has been shown to have a mild anti-inflammatory effect so it can even help ease symptoms.
This is one of my favourite recipes as its delicious and nutritious. We skip the addition of pasta and rather serve it with a fresh piece of sourdough for the perfect winter’s dinner.
Ingredients:
10ml avocado/ coconut/ olive oil
500ml free range bone broth
1 onion, diced
2 leeks, diced
4 carrots, diced
1 stalk organic celery, diced
1 tablespoon arrowroot powder
500g chicken breast
½ head broccoli
1 can light coconut milk
1 thumb size piece of ginger
1 lemon
1 garlic clove
Optional extra: 1 cup pasta of choice, precooked.
Method:
Heat oil of choice in a large pot and add onion, leeks, garlic, ginger, turmeric, black pepper, carrots, celery. Sauté for 5 minutes until soft.
Add bone broth and allow it to boil.
Add whole chicken breasts to the pot, reduce the heat and allow chicken to cook for 15 minutes or until cooked through. Remove the chicken breasts and shred the chicken.
While the chicken is boiling, mix your coconut milk and arrowroot powder in a separate bowl, little by little – whisking until smooth. Arrowroot is a healthier thickener alternative to corn flour. Pour this into your soup and whisk.
Let it simmer for 5 minutes to allow it to thicken.
Return the shred chicken. Add in the broccoli and cooked pasta.
Season with salt + Pepper, squeeze fresh lemon and serve with chopped coriander!
