Dietician approved healthy easy snack: Hidden veggie choc chip muffin
These are one of my favorite on the go snacks! They are great for kids lunch boxes or for those manic days at work.
Normal chocolate chip muffins are low in nutrients and high in sugar leaving you craving more than one and with a blood sugar crash. These have the hidden bonus of chickpeas, chickpeas are high in fiber, protein and healthy fats as well as being low GI!
Ingredients (makes 10 muffins!)
1 can organic chickpeas, rinsed and drained
3 pasture raised large eggs
1/2 cup creamy sugar free peanut butter
1/3 cup raw honey or organic maple syrup
1 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon Celtic or Himalayan salt
1/3 cup organic dark chocolate chips
Method
Preheat the oven to 180 Degrees Celcius
Line a 12 cup muffin tin with 10 muffic liners and spray these with a coconut or avocado oil cook and spray (NB!)
Place the chickpeas and 1 egg in a food processor or blender and process until the beans are well blended. Then add the 2 other eggs, peanut butter, honey, vanilla, baking powder and salt.
Process again until smooth and then stir in the chocolate chips.
Divide the batter evenly among the muffin cups and sprinkle additional chocolate chips or nuts if you would like.
Bake for 25 min. Checking at 20 min. Let cool for 10 and enjoy!
Store at room temp for the first day and then transfer to the fridge (if they last this long!)
Tips: These can be frozen for up to 3 months.
