Dietician approved healthy easy gut loving protein flapjack recipe

There is nothing quite like flapjacks on a Sunday. Topped with fresh berries, yogurt and honey or peanut butter and banana. The options are endless but most flapjack recipes are filled with inflammatory causing ingredients giving them a bad rep. These are gluten-free, gut loving and high in protein, meaning you can have them any day of the week!

Ingredients

  • 1 large pasture raised egg

  • 50g organic rolled oats

  • 1 semi green or yellow banana

  • 125 grams smooth cottage cheese

  • 30ml filtered water

Method

  1. Place all your ingredients in a blender or food processor and process until the oats are fine and ingredients are well mixed.

  2. Use an avocado or coconut oil cook and spray to grease a pan.

  3. Add 1-2 tablespoons of the mixture to a warm pan and cook for about 2 minutes per side.

  4. Serve with some raw honey, organic blueberries and fresh yogurt!

Tips: Dr Enya loves adding organic dark chocolate chips or fresh blueberries to hers! You can even add some lemon juice for a more lemon flapjack!
